From 23 to 29 March 2026, the talented Chef Takehiro Arakawa will once again take over the kitchens at L'Asiatique by Jean-Georges as part of an exceptional culinary residency.
As a true master of Japanese cuisine, Chef Arakawa returns to showcase the treasures of the sea and land through a unique Omakase experience. This exclusive, chef-curated dinner is an invitation to surrender to the master's talent as the precision of his craft meets with an abundance of flavours.

Omakase Menu - Excellence in Motion
In Japanese, the word Omakase translates as ‘I leave it up to you’ and true to this philosophy, Chef Arakawa has created a culinary score of infinite finesse. From the delicacy of sea bass sashimi served with a sprinkling of sea salt and olive oil to the boldness of crispy sardines accompanied by a shibazuke tartar sauce, each dish is a journey in search of that perfect balance.
And the highlight of the journey? Picture steamed sea bream in its dashi broth served with crisp vegetables, followed by the sweet exoticism of coconut milk rice pudding topped with mango, for a wonderfully delicate, mouthwatering finale.
The Art of the Gesture - An exclusive masterclass
To prolong this culinary journey, La Mamounia invites you to join an exclusive masterclass. Under the watchful eye of Chef Takehiro Arakawa, food enthusiasts will have the privilege of trying their hand at traditional techniques and discovering unique flavour combinations, such as salmon with preserved lemon and argan oil or tuna marinated in soy sauce and ras el hanout. This is a rare opportunity to uncover the secrets of a signature cuisine, where Moroccan spices artfully harmonise with Japanese simplicity.
